Far too often, we all have too much to do at lunchtime to stop and prepare a healthy meal. It’s great to have healthy pre-prepared items on hand to have what I call a “Lazy Lunch Bowl!” This preparation concept allows us to make a menopause-friendly meal quickly!

Christy always has black olives, artichoke hearts, and tahini on hand. They last forever in the fridge, and you can also have unopened back-up jars in your cupboard.

Turmeric rice is a great way to add power to an ordinary pot of rice. Turmeric is anti-inflammatory and its phytonutrients can help maintain healthy hormone levels. This is super important during perimenopause and menopause in terms of reducing menstrual irregularities and minimizing hot flashes. Turmeric also bolsters your immunity, and helps keep your mind sharp and your bones strong. We also love adding turmeric to main dishes, and to our daily smoothie. Both fresh and powdered turmeric contain the magical phytonutrients.

If you try out turmeric rice, be sure to make enough to have leftovers. Then, you can quickly assemble this Lazy Lunch Bowl and you’ll feel like you are eating like a queen right in the middle of your busy day.

Servings 1 serving

Ingredients
  

Turmeric Rice

  • 1 cup brown rice
  • 1 1/2 cups water
  • 1 tsp. Turmeric powder
  • 1 bay leaves
  • 2 whole cloves
  • 1 cinnamon stick
  • 3 cardamom pods
  • pinch sea salt

Lazy Lunch Bowl

  • Leftover Turmeric rice
  • 1/2 avocado
  • handful oil cured black olives
  • handful walnuts toasted
  • artichoke hearts to taste
  • drizzle tahini
  • flakey sea salt
  • freshly ground black pepper

Instructions
 

  • Bring water to a boil. Add salt and rice and stir. Then add spices and stir. Return to a boil, cover, and reduce heat to low, and cook for 40 minutes. After cooking, remove the spice pods and stir. Once cool, can store in the fridge in a glass jar or container.
